How are you doing with your new year resolutions? I did a Giveaway for the beginning of the new year on Instagram and I just wanted to hear some of your New Years resolutions. Many of you wrote that you wanted to eat healthier, lose weight or just to eat more greens. Reading that, I must admit, that’s exactly what I’m going through. Eating healthy is so important, not only for your body and how you feel, but also for your skin and your well being.

Eating healthy can be fun & easy

As I’m trying to eat more vegetables and more greens I was looking up different recipes and  new ways to cook them. One of my favorite dishes are zoodles. Zoodles are noodles made out of zucchini, they also might be know as Courgetti (Courgette spaghetti). Zoodles are an incredibly fresh and heathy alternative to pasta and zoodles are a fun way to increase the amount of vegetables we eat.

Let’s make some Zoodles with Kenwood

Since a few months I’m testing the new electric spirilazer FGP200WG from Kenwood. The spiralizer can quickly and easily make vegetable pasta carrots, cucumbers, squash or courgette. It allows you to reinvent classic salads, entrees and desserts with fresh fruits and vegetables in spiral shapes and do it all without a cutting board or knife.

I have to say, having the Spirilazer makes it so much more fun to cook vegetables. I thought I’d include one of my favorite recipes for you. Especially after work when I’m not very motivated to make myself some super fancy dinner it’s the perfect alternative.

Zoodle Quickie

[It will take you about 15 Minutes] Take two zucchini, clean it and make zoodles. While making them you can start to heat up you pan – I love to use my wok pan which I got for my birthday 🎁 🎉  Heat up some sesames oil with some cashew nuts. When the cashew nuts are nicely roasted add the zucchini’s, soy sauce, some garlic and wait till they are browned. Add salt, pepper and whatever spice you’d like and enjoy.
